About Stollen
Stollen is a highlight of German baking. A Stollen is compact, bread-like loaf studded with dried soaked fruit, marzipan, and almonds. It's traditionally prepared and enjoyed in German-speaking regions of Europe during the time of Advent, the weeks before Christmas. Its tradition is hundreds of years old and families keep their own recipes. Stollen is a delicacy, and as such the epitome of a joyful anticipation of Christmas, to be enjoyed slice by slice over weeks with a cup of tea or coffee, solo or with friends.
Stollen keeps very well, in fact it gets better the longer you leave it to do its magic. When you receive your order in the first week of December, store it in a tin or wrapped at room temperature and it will easily keep for another 12 weeks.
About the baker
Eleni grew up in Germany and moved to Scotland in 2018. She's been lucky to have learned all things sourdough from Glasgow's best bakers. Shout out to Leo from Kaf who's shared her knowledge so generously over the years!
About Schnee
Schnee [ʃneː] is the German word for snow. Although the thick coat of icing sugar is primarily a method to preserve the Stollen, both share the visual resemblance and their fleeting seasonal appearance. Having made Stollen for friends for several years, Eleni has launched this as an expanded project for the first time in 2023.
